Regarding the cryogenic resistance thermometer R800-6, the instruction current is 2mA DC (1mA DC can be designate), but is it okay to use it with a 1mA instrument?

No problem. current The lower the value, the smaller the self-heating and the more accurate the measurement. The 4-wire input of our DB1000 is also 1mA.
